Byron Bay Oyster Merchants is a fresh oyster business based in Byron Bay, on the far north coast of New South Wales. We specialise in live, tank-to-table oysters — grown in the pristine estuaries of northern NSW and held in our purpose-built live-tank system until the moment you collect them.

Order online and pick up fresh live oysters direct from our Byron Bay facility — unshucked, never frozen, and packed in 5, 10 or 20 dozen bags. Existing wholesale and trade customers can log in to our ordering portal for delivered orders along the eastern seaboard with full temperature control.

What sets us apart is freshness. While conventional supply chains deliver oysters chilled on ice — stressed and steadily declining — we keep ours alive in water that replicates the exact salinity, temperature and oxygen levels of the open ocean. The result is a fundamentally different product: you taste the sea, not the transit.
