Tank to Table: The Live Oyster Supply Process

Tank to table is more than a slogan — it is the operating philosophy behind every dozen oysters Byron Bay Oyster Merchants ships. The journey begins in the sheltered estuaries of the northern New South Wales coast, where our Sydney Rock and Pacific oysters are grown over three to four years in tidal waters prized for their mineral richness and consistent salinity.

At harvest, oysters are lifted from the leases and transported the short distance to our Byron Bay facility. This is where our process diverges from conventional supply. Rather than packing immediately onto ice — which stresses the animals and starts a slow decline in flavour — we transfer them straight into a purpose-built live holding tank.

The tank is a carefully calibrated ecosystem. Salinity is held at 35 parts per thousand to mirror open-ocean conditions, temperature is maintained between 14 and 18 degrees Celsius within the oysters’ optimal living range, and a multi-stage biological filtration system keeps the water pristine and oxygen-rich around the clock. Held in these conditions, the oysters purge, settle, and remain in peak vitality — alive, not merely preserved.

Orders are filled to schedule. Each oyster is hand-sorted for uniformity and shell integrity, then packed fresh from the tank — ready for collection from our Byron Bay facility, or dispatched along our delivery corridor from Brisbane to Coffs Harbour for our wholesale trade customers. Tuesday through Saturday, our vehicles move with kitchen prep windows in mind, so that what arrives is as fresh as what left the tank hours earlier.

The result is a fundamentally different product. Where ice-packed oysters lose vibrancy by the hour, our live-tank oysters carry the full briny character, firm texture and clean sweet finish of the estuary they came from — delivered with the vitality of an animal that was, until the moment of shucking, still living in water from the sea.
